The Apple Pie Bakery Café is one of five on-campus restaurants at The Culinary Institute of America. Located just inside the entrance to historic Roth Hall, it provides a casual dining experience with seated service and walk-through take-out for baked goods, sandwiches and hot drinks. One of the most popular dining destinations on campus, it was reconfigured and refreshed to improve customer flow and to upgrade the dining experience.
Working with interior designer Adam Tihany’s concept, Noelker and Hull coordinated the design and construction teams for a complete renovation and rebranding, separating walk-through traffic from table service and improving back-of-house services to increase the capacity of the Apple Pie Bakery Café’s relatively small space to meet demand.
